粋 sui. is a Japanese tea salon that reimagines tea not simply as a drink to quench thirst, but as an experience encompassing time, ritual, and lingering aftertaste.
In the world of wine, there is a culture that deepens appreciation through terroir, extraction, temperature, and finish.
At Sui, we bring this philosophy into the world of Japanese tea, carefully drawing out the evolving aromas and flavors found in each infusion.
All tea leaves used at Sui are of the highest grade.
We focus on carefully selected single-origin teas from dedicated producers, with an emphasis on organic and hand-picked leaves. Only limited-production teas of exceptional quality are served.
Within a quiet and refined space, we invite you to experience a new perspective on Japanese tea.
“Sui” represents an unspoken sense of beauty and elegance.
Please enjoy the quiet space that lingers between each moment.
At 粋 sui., Japanese tea is not defined by names, but expressed through numbers.
Traditionally, Japanese teas are identified by their region, cultivar, or production name. Yet these labels often shape perception before the tea is even tasted, creating expectations that can subtly influence how flavor is experienced.
At Sui, we intentionally remove names altogether and present each tea as a number. This approach shifts the focus away from origin and classification, inviting you instead to engage directly with taste itself.
All teas served are of the highest grade. We work exclusively with carefully selected, limited-production teas, including hand-picked harvests and single-crop, once-a-year productions of exceptional quality.
Here, numbers are not a system of categorization, but a quiet language — a way to step beyond preconception and encounter tea in its purest form.
At 粋 sui., we offer a curated selection of teas designed to be enjoyed for their aroma and lingering aftertaste, with a focus on carefully brewed Japanese tea prepared in a kyusu (teapot).
One of the unique pleasures of Japanese tea lies in its evolution over multiple infusions. Even when brewed from the same leaves, the flavor gently transforms from the first steep to the second and third, revealing different layers of character with each cup.
